  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup long grain white rice uncooked
  • 2 cups beef broth
  • 10.5 oz cream of mushroom soup 1 can
  • 1 cup sour cream
  • 1.5 cups shredded cheddar cheese divided
  • 0.5 tsp paprika
  • salt and pepper to taste

  • chopped parsley or green onions

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large oven-safe skillet over medium heat, brown the ground beef until fully cooked. Add diced onion and minced garlic; cook until softened, about 3–4 minutes. Drain any excess grease.
  • Season the beef mixture with paprika, salt, and pepper. Stir in the uncooked rice, coating it well.
  • Pour in the beef broth, cream of mushroom soup, and sour cream. Mix thoroughly until well combined.
  • Bring the mixture to a gentle simmer. Cover and let simmer on the stovetop for about 10 minutes.
  • Sprinkle half of the shredded cheddar cheese over the top. Transfer the skillet to the oven and bake uncovered for 20–25 minutes, until the rice is tender and cheese is bubbly.
  • Top with the remaining cheddar cheese after baking. Garnish with chopped parsley or green onions, and serve hot.

Notes

Lean Ground Beef: Use 90/10 or 93/7 beef for a lighter version.
Rice Alternatives: Brown rice can be used but will need more broth and time.
Gluten-Free Option: Use gluten-free soup and broth.
